Choosing between Granite and Marble is not just about color; it's about lifestyle. Granite is an igneous rock formed from cooling magma, making it incredibly hard. Marble is metamorphic, composed of calcium carbonate, which reacts with acids.
Durability & Scratch Resistance
Granite: Ranks 6-7 on Mohs. You can cut vegetables directly on it. Ideal for high-traffic family kitchens. Absolute Black is practically bulletproof.
Marble: Ranks 3-4. It will scratch if you drag a heavy pot. Over time, these scratches create a 'patina'.
The Acid Test (Etching)
If you spill lemon juice on Marble, it will 'etch' (leave a dull mark) instantly. Granite is generally inert to acids. If you are a messy cook, choose Granite. If you are a baker who needs a cool surface for dough, choose Marble.
