The Soft Touch

Soapstone (Steatite) is chemically inert. You can pour acid on it, and nothing happens (that's why science labs use it). But it is soft—you can scratch it with a fingernail. It requires regular oiling to keep it black.

The Hard Rock

Granite like Steel Grey is much harder. It won't scratch. While it needs sealing against oils, it doesn't require the monthly maintenance of Soapstone. For a busy family kitchen, Granite is the lower-maintenance choice.
