Polished vs. Honed Marble: Which Hides 'Etching' Better?

The Acid Scar

Marble is calcium carbonate. When acidic lemon juice or tomato sauce touches it, a chemical reaction occurs that dissolves a microscopic layer of the stone. This is called an "etch."

Polished Marble

On a mirror-polished Indian Statuario slab, an etch looks like a dull, matte spot. Against the glossy background, it stands out like a sore thumb. You can see it from across the room.

Honed Marble

A honed finish is already matte. Therefore, when an acidic etch (which is also matte) happens, it camouflages into the surface. You can't see it unless you look at a specific angle.
The Verdict: If you must have marble in a kitchen, always choose Honed. It makes the inevitable aging process much less stressful.
